Wine maker notes: The vineyard is maintained with particular care, with close-cutting practiced to ensure reduced yield. We use only organic supplements, avoiding in all cases the application of chemical products. Leaf removal is performed on the vines and grapes are green harvested. In the case of the Cuvée des Demoiselles, we employ a partial selection that favors older vines an average age of 25 years old. Its charming minerality affords it a cellaring potential of at least a decade.

Tasting notes: Flashes of pale Yellow usher in a bouquet of acacia flowers, white peach and soft Notes of citrus. Sophisticated freshness and a round body affirm the wine's perfect placement alongside the finest of lean fish and white meat.
Food Pairing: Fish in sauce, charcuterie, giblets, tripe, andouillette, fowl and lamb curries, goat/sheep's milk cheeses or aged parmesan.
