Wine maker notes: The 2015 vintage produced a slightly reduced crop due to the cold winter. The resulting fruit shows a balance of flavours and crisp acidity . The grapes were harvested the beginning of October with 20% of the fruit set aside to be dried using the traditional appassimento method. The wine was barrel fermented in French oak barrels with continued ageing on light lees for 15 months before final blending and bottling.
Grape Variety/Blend: Chardonnay
Tasting Note: Our 2015 Chardonnay is a medium golden yellow colour. Aromas on the nose include ripe grilled pineapple and sweet papaya with layers of vanilla bean and subtle creamy notes. On the palate the flavours of pineapple, vanilla and tropical fruit combine with crisp, balanced acidity leading to a long creamy finish.
Food Pairing: Some food ideas include: roasted chicken and turkey, fresh corn on the cob, lobster, seared whitefish, mushroom risotto, seared scallops in butter, stuffed pork tenderloin
