Wine maker notes: THE SOIL This south-facing slope belongs to the Flyshzone, where marl and sandstone, with a layer of thin loess are typical. All together this leads to a very high maturity of the grapes. THE VINES have been approx. 15 years old and are cultivated in a dense of around 4500 vines/ha. To profit from the rising ground-heat and to reach a high foliage-wall we use a trellis training system at about 60-90 cm and apply the guyot cutting system. THE HARVEST took place by the mid of October at 21° KMW, picked by hand with a small, well-trained team, which selected the grapes directly in the vineyard. IN THE CELLAR the grapes have been squeezed and must was fermented with automatic temperature-control at 28°C for 21 days in stainless steel tanks with pumping over. 70% of the wine has been stored in new Barriques , after 18 months the wine was bottled in our cellar in Burgundy-bottles.
