Wine maker notes: Hand picking and selection of the grapes. Follows grain shedding and hand sorting. Continuous pre-fermentation maceration of the grapes mash, defoliation, follows by heating and seeding with a pure culture of selected yeast suitable for the brand. Fermentation under constant control of temperature, density and organoleptic qualities. Finally low-lactic fermentation. The wine matures in French and American Baric-type barrels.
