Wine maker notes: The grapes were hand harvested and sorted in early September with 20% of the grapes being dried in the appassimento style. The wine was aged for 16 months on lees in select French oak barrels before being blended for bottling.
Grape Variety/Blend: Pinot Noir
Tasting Note: On the nose are rich aromas of spice, dried cranberry, cherry, and red currants, vanilla bean, hints of tobacco, leather, and roasted walnut. The palate showcases a perfect balance of fruit, oak, and silky tannins. Delicious flavours of cherry, cranberry, and leather notes follow through to a very long, complex, and elegant finish.
Food Pairing: A perfect wine to enjoy on its own or pair with roasted turkey with fresh shiitake and crimini mushrooms and dried porcini mushroom stuffing, roast chicken and vegetables, duck confit, cedar plank salmon, mushroom risotto, stuffed pork tenderloin, and rack of lamb.
