Wine maker notes: The grapes are harvested by hand and in boxes in the early hours of the day. Once in the hold without being crushed they are housed in the pneumatic press and a very soft pressing (35% yield) is carried out, in order to extract the lightest color. After a natural cleaning of the juice by gravity and at a temperature of 10 °C, the fermentation takes place at a low temperature (15 °C) to conserve and maximize the freshness and fruit of the varieties. Once the fermentation is finished the wine is left in contact with its yeasts one season, this will bring roundness and volume in the mouth.
Grape Variety/Blend: Bobal and Pinot Noir
Tasting notes: The wine comes in a pale salmon pink color with slight lilac reflections. Wine of good complexity and aromatic fineness, emphasizing notes of red fruit to flowers of violet. On the palate you will find delicate and very freshness.
Food Pairing: It perfectly accompanies all kinds of snacks, fish or seafood or white meats, salads, as well as pasta and seafood. It is highly recommended to accompany it between hours with cooked pates, fresh cheeses or shrimp.
